The goal of this thesis design project is to transform the existing Premier Inn on South Great George's St in Co. Dublin into a contemporary brewery. Notably, the Dublin hotel scene is oversaturated, lacking new cultural and social spaces. Given the challenges posed by the pandemic, Dublin's pubs and clubs have faced difficulties staying open. The brewery will operate as Trouble Brewing, a craft beer company originating from Kildare, situated in Dublin's inner city. Beyond its function as a brewery and the company's city headquarters, it will incorporate private taprooms, a modern bar, retail space, exhibition-tour space, and company offices. Drawing inspiration from both the original Victorian architecture and the contemporary brand's visual identity, the aim is to craft a colourful, quirky, and functional brewery. This fusion of historical and contemporary elements is inspired by Postmodernism, particularly in terms of colour, pattern, and form. The revitalised building will contribute to the visual rhythm along South Great George's Street, enhancing its interaction with the public realm.
